Oatmeal Souffle Recipe

Ingredients

 
1 1/2 cups seasoned stock
 
1/2 cup cheese, grated
 
1 tablespoon nutritional yeast
 
3/4 cup milk
 
1 tablespoon soy flour
 
1/4 teaspoon cloves, ground
 
3 eggs, separated
 
1/2 cup oatmeal

Directions

Heat stock in top of double boiler over direct heat.
When boiling, add yeast, cloves and oatmeal.
Cover.
Place over bottom of double boiler, to which hot water has been added.
Cook over gentle heat for 20 minutes, or until oatmeal has absorbed liquid.
Remove from heat.
Gradually stir in cheese, milk, soy flour and egg; yolks and blend well.
Beat egg whites stiff and fold in.
Turn into oiled custard cups.
Bake for about 30 minutes in 350° F. oven.
