Oatmeal-Raisin Bread Recipe

Ingredients
3/4 cup oats
1 package active dry yeast
1 cup warm water (105 to 115°)
2 cups all-purpose flour
1/4 cup molasses
3 tablespoons shortening
2 teaspoons salt
1 egg
1 cup raisins
3/4 cup all-purpose flour
2 tablespoons packed brown sugar
1 egg white, slightly beaten
Directions
Spread oats in single layer in ungreased rectangular pan, 13x9x2 inches.
Toast in 350° oven, stirring occasionally, until golden brown, about 10 minutes; cool.
Remove 1/4 cup oats; crush and reserve.
Dissolve yeast in warm water in large bowl.
Add 2 cups flour, the molasses, shortening, salt and egg.
Beat on low speed until moistened; beat on medium speed, scraping bowl occasionally, 2 minutes.
Stir in raisins, 3/4 cup flour and 1/2 cup oats.
Spread evenly in greased loaf pan, 9x5x3 inches.
(Batter will be sticky.) Round top of loaf by patting with floured hands.
Mix reserved oats and brown sugar.
Brush loaf with egg white; sprinkle with oat mixture.
Let rise in warm place until batter is about level with top of pan, about 1 hour.
Heat oven to 375°.
Bake until loaf is brown and sounds hollow when tapped, 40 to 45 minutes.
Immediately remove from pan; cool on wire rack.
Anadama Bread: Omit oats, raisins and brown sugar.
Add 1/2 cup yellow cornmeal with the 3/4 cup flour.
Brush loaf with egg white; sprinkle with 2 tablespoons cornmeal.
