Oatmeal Date Muffins Recipe
oatmeal date muffins are baked with rolled oats along with chopped and moist dates for a sweet and crunchy muffiin recipe. The buttermilk makes this muffin nice and moist as it comes out of the oven.
Ingredients
1 cup all-purpose flour 250 mL
2 tsp baking powder 10 mL
1/2 tsp baking soda 2mL
1/2 tsp salt 2mL
1 cup old-fashioned rolledoats 250 mL
1 cup buttermilk 250 mL
1/2 cup packed dark brownsugar 125 mL
1 egg, beaten
1/2 cup butter or margarine,melted 125 mL
1/2 cup chopped moist dates 125 mL
Directions
In a medium bowl, sift together flour, baking powder, baking soda and salt.
In a large bowl, combine oats and buttermilk.
Let stand for 5 minutes.
Add sugar, egg and butter, mixing well.
Fold in dates.
Add to flour mixture, stirring just until moist and blended.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Bake in preheated oven for 25 to 30 minutes.
