Oatmeal Cream With Fruit Recipe
Ingredients
1 c. quick rolled oats 250 mL
1 1/2 c. whipping cream 375 mL
1/2 c. sugar 125 mL
1/2 tsp. vanilla 2 mL
1/2 tsp. dark rum 2 mL
1/4 c. ground almonds Strawberries or raspberries 50 mL
Directions
Preheat the oven to 350°F (180°C).
Spread the rolled oats on a cookie sheet and toast until lightly browned; this should take approximately 15 minutes. (You may wish to toast the oats in the microwave for approx. 2-3 min. on high.)
While the oats are cooling, beat the cream until fairly stiff, fold in the sugar, vanilla, rum, and almonds.
Fold in the cooled oats and turn into dessert dishes.
Top each serving with sliced or chopped berries or other fresh fruit.
You may wish to refrigerate this dessert briefly before serving.
