Oatmeal Cookies Recipe

Oatmeal cookies are nice and crunchy cookies made with rolled oats along with walnuts. Spiced with nutmeg and cinnamon, the oatmeal cookies are chewy and snacky and baked with buttermilk. Pop these in the oven for a healthy and filling snack.

Ingredients

 
1 cup shortening
 
1 1/2 cups brown sugar
 
2 eggs
 
1/2 cup buttermilk
 
1 3/4 cups sifted enriched flour
 
1 teaspoon soda
 
1 teaspoon baking powder
 
1 teaspoon salt
 
1 teaspoon cinnamon
 
1 teaspoon nutmeg
 
3 cups quick-cooking rolled oats
 
1/2 cup raisins
 
1/2 cup chopped California walnuts

Directions

Cream together shortening, brown sugar, and eggs till light and fluffy.
Stir in buttermilk.
Sift together flour, soda, baking powder, salt, and spices; stir into creamed mixture.
Stir in rolled oats, raisins, and nuts.
Drop from tablespoon 2 inches apart on greased cooky sheet.
Top each with walnut half, if desired.
Bake in hot oven (400°) about 8 minutes or till lightly browned.
Cool slightly and remove from pan.

Why would I want to use Splenda to make cookies then turn a round and use a cake mix? Cake mix has 2/3 cups of sugar!!!
