Oatmeal Cinnamon Muffins Recipe

Crunchy oatmeal cinnamon muffins are just the thing for you in the morning, if you want a change for breakfast. Spiced up with cinnamon and a delightful pinch of nutmeg, this muffin recipe smells great as it bakes. I often make these in the morning and the smell of them baking is enough to get you wide awake!

Ingredients

 
1 cup all-purpose flour 250 mL
 
3 1/2 tsp baking powder 17 mL
 
1/2 tsp salt 2 mL
 
1/2 tsp cinnamon 2mL
 
Pinch ground nutmeg
 
3/4 cup rolled oats 175 mL
 
1/2 cup lightly packed brown sugar 125 mL
 
1 egg
 
1 cup milk
 
1/4 cup vegetable oil or shortening, melted 250 mL

Directions

In a large bowl, combine flour, baking powder, salt, cinnamon and nutmeg.
Stir in rolled oats and brown sugar; blend together well.
In another bowl, beat together egg, milk and oil.
Add to flour mixture and stir only until moistened.
Batter will be lumpy.
Spoon batter into prepared muffin tin, filling cups two-thirds full.
Bake in preheated oven for 20 to 25 minutes or until done.
