Oatmeal Souffle Recipe
Ingredients
3 cups water
1 teaspoon salt
1 1/3 cups rolled oats
4 egg yolks
2 tablespoons honey
1 1/2 tablespoons freshly grated Lemon peel
4 egg whites
Directions
Bring the water to a boil in a large saucepan.
Stir in 1/2 teaspoon salt and the rolled oats.
Cook for 5 minutes over moderate heat, stirring constantly.
Remove from heat, cover, and let stand for 5 minutes.
Meanwhile, heat oven to 400° F., and butter a 2-quart souffle dish.
With a wooden spoon, beat egg yolks into rolled oats, 1 at a time.
Add the remaining salt, the honey, and the lemon peel.
In a clean, dry bowl, beat the egg whites until stiff peaks form when beater is lifted.
Gently fold egg whites into rolled oats mixture.
Turn mixture into prepared souffle dish and bake 30 to 35 minutes, until puffed and beginning to brown.
