Oatmeal Raisin Muffins Recipe
Ingredients
| Oatmeal | 1 Cup (16 tbs) | |
| Skim milk | 1 Cup (16 tbs) | |
| Vegetable oil spray | ||
| 1/2 cup acceptable margarine, melted | ||
| 1 egg, slightly beaten | ||
| Firmly packed brown sugar | 1/4 Cup (16 tbs) | |
| Raisins | 1/2 Cup (16 tbs) | |
| 1 cup whole-wheat flour | ||
| Baking soda | 1 1/2 Teaspoon | |
| Baking powder | 1 1/2 Teaspoon | |
Directions
Combine oatmeal and milk in a large bowl.
Cover and let sit in refrigerator for 1 hour.
Preheat oven to 400° F.
Lightly spray a muffin tin with vegetable oil.
Remove oatmeal mixture from refrigerator and add margarine, egg, brown sugar and raisins.
Stir well.
Set aside.
In another bowl, mix dry ingredients together.
Add to oatmeal mixture.
Stir only enough to moisten the flour.
Batter should be lumpy.
Fill muffin tins two-thirds full with batter.
Bake 15 to 20 minutes.
Cover and let sit in refrigerator for 1 hour.
