Oatmeal-Raisin Muffins Recipe

Ingredients

 
1 cup (240 ml) buttermilk
 
1 cup (240 ml) quick oats
 
1 cup (240 ml) Organic Whole Wheat Flour
 
1 tsp (5 ml) baking powder
 
1/2 tsp (3 ml) baking soda
 
1/2 tsp (3 ml) salt
 
2 tsp (10 ml) cinnamon
 
1/3 cup (80 ml) softened butter or margarine
 
1/4 cup (60 ml) firmly packed brown sugar
 
1 tbs (15 ml) honey
 
1 egg
 
1/2 cup (120 ml) raisins or dried apples, chopped

Directions

Boil and stir buttermilk and oats for 2 minutes.
Let cool.
Preheat oven to 400°F (205°C).
Mix flour, baking powder, soda, salt and cinnamon in medium bowl.
In large bowl cream together butter, brown sugar, honey and egg.
Mix in cooled oat mixture.
Add raisins.
Add dry ingredients and mix with spoon only until dry ingredients are moistened.
Fill greased muffin tins 2/3 full.
Ba|ke 25-30 minutes.
