Oatmeal Raisin Cookies Recipe
Ingredients
| Unsalted butter | 1/2 Cup (16 tbs) | |
| 3/4 cup granular sugar substitute | ||
| Egg | 1 Large | |
| Vanilla extract | 1/2 Teaspoon | |
| Baking soda | 1/2 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| 6 tablespoons Atkins Quick Quisine Bake Mix | ||
| 1 cup old-fashioned or quick- cooking oats | ||
| Raisins | 1/4 Cup (16 tbs) | |
Directions
1. Preheat oven to 350°F.
2. Combine butter and sugar substitute in a large bowl. Beat with an electric mixer until pale and creamy; beat in egg and vanilla. Add baking soda, salt, and bake mix; beat until well blended. Add oats and raisins and beat until just combined.
3. Drop 16 heaping tablespoons on an ungreased baking sheet. Bake until bottoms of cookies are browned and tops are lightly browned, 8 to 10 minutes. Cool on a rack.
