 All-purpose flour - 1/3 cup plus 2 teaspoons
 Quick oats1 1/2 Ounce, uncooked
 Dark raisins2 Tablespoon, chopped
 Baking soda1/8 Teaspoon
 Cinnamon1/8 Teaspoon
 Light brown sugar2 Tablespoon, firmly packed
 Butter, softened - 2 tablespoons, sweet, whipped
 Sugar1 Tablespoon
 Margarine1 Tablespoon
 Egg -€“ 1 number
 Vanilla extract1 Teaspoon

Directions

GETTING READY
1. Preheat oven to 350°F.
2. In a mixing bowl combine flour, oats, raisins, baking soda, and cinnamon and set aside.
3. Using an electric mixer on medium speed beat together brown sugar, butter, granulated sugar, and margarine until light and fluffy.
4. Add egg and vanilla and continue beating to mix well.
5. Stir in the oat mixture.

MAKING
6. Spray nonstick cookie sheet with nonstick cooking spray and drop dough by onto the sprayed sheet, forming 12 cookies and leaving a space of about 2 inches between each.
7. Bake for about 8 to 10 minutes until cookies are lightly browned and crisp.

SERVING
8. Serve the cookie warm and crispy as a snack.
