Raisin Oat Cookie Recipe Video
Ingredients
1 large egg, beaten
1 teaspoon vanilla extract
1 cup raisins
1/2 cup (1 stick) unsalted butter, softened (room temperature)
1/2 cup sugar
1/2 cup brown sugar (dark)
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt (kosher)
1/2 teaspoon cinnamon
1 1/2 cups old-fashioned oats
Directions
Combine egg, vanilla, and raisins in a small bowl and let mixture sit for 1 hour.
Preheat oven to 350°F (177°C) and move oven rack to center.
Beat butter and sugars together until smooth. Add and stir in flour, soda, salt, and cinnamon. Mix in raisin mixture and then oats. Spray baking (cookie) sheet with non-stick spray. Spoon out cookie dough and roll into balls with 1 inch diameter. Lay on sheet 2 inches apart. Bake for 11-13 minutes or until lightly golden. Remove from oven and let cookies cool on baking sheet for 2 minutes to set. Enjoy!
THIN and CRISPY COOKIE: For a thinner and crispier oatmeal raisin cookie, double the amount of butter in the recipe above. Bake according to instructions, no other changes.
