Oatmeal Raisin Cakes Recipe
Ingredients
| 1/2 cup quick-cooking rolled oats | ||
| Water | 2 Cup (16 tbs) | |
| 2 cups Hungry Jack® Buttermilk Complete or Extra Lights® Complete Pancake Mix | ||
| Raisins | 1/2 Cup (16 tbs) | |
| Sugar | 2 Tablespoon | |
| Cinnamon | 1/2 Teaspoon | |
Directions
Heat griddle to 375°F.
Grease lightly with oil.
In medium bowl, combine rolled oats and water; let stand 5 minutes.
Add remaining ingredients; stir just until all ingredients are moistened.
Pour 1/4 cup batter for each pancake onto hot griddle.
Cook 1 to 1 1/2 minutes, turning when edges look cooked and bubbles begin to break on surface.
Continue to cook 1 to 1 1/2 minutes or until golden brown.
