Oatmeal Orange Coffee Cake Recipe
Ingredients
1 1/2 cups all-purpose flour
1 cup oats, uncooked
1/3 cup brown sugar, firmly packed
1 tablespoon baking powder
1/2 teaspoon baking soda
2 ripe bananas, mashed
1/2 cup orange juice
1/2 cup butter, melted
1 egg, beaten
1/4 teaspoon orange rind, grated
1/2 teaspoon vanilla
1/2 cup powdered sugar
1 tablespoon orange juice
1/4 teaspoon orange rind, grated
Directions
Insert metal accessory rack.
Preheat oven to 350°F In large mixing bowl, combine flour, oats, brown sugar, baking powder and baking soda.
Combine bananas, orange juice, butter, egg, orange rind and vanilla.
Add to flour mixture.
Mix until moistened.
Grease the bottom only of 9 inch round springform pan.
Pour batter into pan.
Bake for 25 to 30 minutes until golden brown.
Cool 10 minutes on wire rack; remove from pan.
In small mixing bowl, combine powdered sugar, orange juice and orange rind.
Drizzle evenly over cake while still warm.
