Oatmeal Muffins Recipe
I have a recipe which is very near and dear to my heart and that is of oatmeal muffins. This oatmeal muffins when served as breakfast is sure to please your family members. Once you try preparing this oatmeal muffins, I am sure you will be making it again!.
Ingredients
1 cup regular or quick-cooking rolled oats
1 cup buttermilk
1 cup all-purpose flour, unsifted
1/2 teaspoon each salt and soda
1 1/2 teaspoons baking powder
1/2 cup butter or margarine, melted
1/2 cup firmly packed brown sugar
1 egg, beaten
Directions
Combine oats and buttermilk; let stand for 30 minutes.
Stir together until thoroughly blended the flour, salt, soda, and baking powder.
Add melted butter, sugar, and egg to oatmeal mixture and blend thoroughly.
Stir in dry ingredients just until blended.
Spoon batter into greased 2 1/2-inch muffin pans, filling each about 2/3 full.
Bake in a 350° oven for about 25 minutes or until browned and tops spring back when lightly touched.
