Oatmeal Lace Cookies Recipe

Ingredients
1 cup rolled oats
1/2 cup soft butter
1/2 cup warmed honey
1 egg, lightly beaten
1 teaspoon vanilla
1/2 teaspoon salt
Directions
Preheat oven to 350°F Put oats into blender, set at "chop," and process a few minutes, until they become a coarse flour (or put through food grinder, using fine blade).
In a medium-size bowl, cream butter, then add honey and mix well.
Add egg and stir until mixture is smooth.
Add vanilla and salt, then stir in oatmeal flour.
Drop by the half-teaspoonful onto greased cookie sheet, about three inches apart, because they will spread while baking.
Bake for 12 minutes in the preheated oven.
Remove cookies from sheet while they are still hot€”allow to stand for only 1 minute.
Cool on wire rack and store in sealed container.
Cool cookie sheet completely before filling with second batch of cookies.
