Oatmeal Fig Cookies Recipe
Ingredients
| Dried figs | 1 Cup (16 tbs) | |
| Shortening | 3/4 Cup (16 tbs) | |
| Sugar | 1 Cup (16 tbs) | |
| Egg | 1 | |
| Milk | 2 Tablespoon | |
| Vanilla | 1 Teaspoon | |
| Flour | 1/2 Cup (16 tbs), sifted | |
| Salt | 1 Teaspoon | |
| Baking powder | 1 Teaspoon | |
| Cinnamon | 1 Teaspoon | |
| 2 cups quick-cooking oats | ||
Directions
GETTING READY
1.Put the figs in the boiling water and leave for 10 minutes.
2.Once done, strain and trim the stems of figs.
3.Chop the figs in small pieces.
4.Preheat the oven to 350degrees.
MAKING
5.Blend shortening and sugar until light and creamy.
6.Put egg, milk and vanilla to the mixture and stir.
7.Combine flour, salt, baking powder and cinnamon and put in the creamed mixture.
Stir well.
8.Put oats and figs and stir well.
9.Taking oiled baking sheets and drop a teaspoon ful of the mixture onto them.
10.Bake for 12-15 minutes.
