|Flaked unsweetened coconut||1 Cup (16 tbs)|

Add fructose and beat for 3 to 4 minutes.
Slowly beat in melted margarine.
Sift flour, salt, baking powder, and baking soda together.
Beat into egg mixture.
Add oatmeal and coconut; then beat until well blended.
Allow to rest for 2 minutes.
Drop batter by teaspoonfuls onto an ungreased cookie sheet.
Bake at 350°F (175°C) for 12 to 14 minutes.
Remove from cookie sheet; then move to rack to cool.
