Oatmeal-Cinnamon Muffins Recipe
Are you looking for a yummy Oatmeal-cinnamon Muffins recipe that will make your guests come back to your door-step time and again? Best enjoyed as a Breakfast this recipe was taught to me by a dear friend who also happens to be a great chef. Is there a higher crime than reading about this Oatmeal-cinnamon Muffins and not trying it out?
Ingredients
1 cup old-fashioned oats
1 cup buttermilk
2 eggs, lightly beaten
1 cup all-purpose flour
1/3 cup packed brown sugar
1-1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
Directions
In a large bowl, combine oats and buttermilk; let stand 5 minutes.
Stir in eggs.
Combine flour, brown sugar, baking powder, cinnamon and baking soda; stir into oatmeal mixture just until moistened.
Fill greased or paper-lined muffin cups two-thirds full.
Bake at 400° for 18-20 minutes or until muffins test done.
Cool in pan 10 minutes before removing to a wire rack
