 Yogurt1/4 Cup (16 tbs)
 Whole wheat pastry flour1 1/4 Cup (16 tbs)
 Soda1 Teaspoon
 Cinnamon1 Teaspoon
 Salt1/2 Teaspoon
 Butter2 Tablespoon (Topping)
 Honey2 Tablespoon, warmed (Topping)
 Milk powder2 Tablespoon (Topping)
 Unsweetened coconut1/2 Cup (16 tbs) (Topping)

Directions

Pour boiling water over the rolled oats and let soak for 20 minutes.
Mix butter, honey, vanilla, eggs, and yogurt.
Beat with spoon or whisk until smooth and fluffy.
Preheat oven to 325° F.and grease a 9-inch square pan.
Add oatmeal to honey-butter-egg mixture.
Combine flour, soda, cinnamon, and salt.
Add to batter.
Pour into prepared pan and bake in preheated oven for about 55 minutes.
Remove cake from oven, turn on broiler, then mix topping, adding each ingredient as given.
Spread over the hot cake, place under the broiler for about 5 minutes, until topping is bubbly and slightly brown.(Watch carefully so it does not burn.)
