Ingredients

 1 1/2 cups oatmeal, preferably Scottish
 1 1/2 cups wholewheat flour
 Salt1/2 Teaspoon
 Unsalted butter8 Tablespoon
 Lard8 Tablespoon

Directions

Mix together the oatmeal, flour and salt.
Rub in the butter and lard until the mixture resembles crumbs.
Add a little cold water and knead to a stiff dough.
Roll out on an oatmeal-dusted surface, to a thickness of about 1/4 inch.
Cut into 2 1/2-inch rounds or triangles and arrange on baking sheets.
Bake in a preheated 400° oven for 10-15 minutes or until set and lightly browned.
Cool on a wire rack.
