Oatcakes Recipe
Ingredients
| 250 g/8 oz fine oatmeal | ||
| Salt | 1/4 Teaspoon | |
| Generous pinch bicarbonate of soda | ||
| Melted butter | 1/2 Tablespoon | |
| Hot water to mix | ||
Directions
Mix the dry ingredients in a bowl, then add the fat and sufficient hot water to make a fairly stiff dough.
Roll out as thinly as possible on a board dusted with plenty of oatmeal.
Use light, swift strokes and handle quickly.
Roll into a circle the size of a small dinner-plate and divide into three.
Bake on a hot griddle for 5 minutes, then finish off in a moderately hot oven (200°C/ 400°F/Gas Mark 6) for another 5-10 minutes.
