Oat Or Bran Muffins Recipe
Need a healthy bran or oat muffin recipe? Try this easy to prepare and bake muffin recipe that you can make with bran cereal or rolled oats. Made crunchy with biscuit mix, this snacky muffin baked with brown suagr is sure to satisfy your hunger pangs.
Ingredients
1 egg
2 tbsp vegetable oil or shortening, melted 25 mL
1 cup soured skim milk 250 mL
1/2 tsp baking soda 2mL
2/3 cup All-Bran cereal or rolled oats 150 mL
1 1/3 cups homemade or packaged biscuit mix
1/3 cup packed brown sugar 75 mL
Directions
In a large bowl, beat egg.
Add oil, milk, baking soda and All-Bran, mixing well.
Add Biscuit Mix and brown sugar.
Spoon batter into prepared muffin tin, filling cups two-thirds full.
Bake in preheated oven for 18 to 20 minutes.
VARIATION:
Orange Muffins: Add a little grated orange zest, plus 2 to 3 tbsp (25 to 45 mL) sugar for a sweeter muffin.
HINT: Use a packaged muffin mix, or one of your homemade mix recipes, to make a good quick coffee cake.
