Ingredients

 
1 1/4 cups sifted all-purpose flour
 
2/3 cup lightly packed brown sugar
 
2 1/2 teaspoons baking powder
 
1/2 teaspoon salt
 
1 large egg
 
1 cup mashed banana (2 to 3 bananas with brown-flecked peel)
 
1/3 cup butter or margarine, melted and cooled
 
1 teaspoon vanilla extract
 
2/3 cup water
 
1 tablespoon orange-flavored instant drink granules
 
2 cups ready to eat oat flakes
 
1/2 cup chopped nuts

Directions

Mix the flour, brown sugar, baking powder, and salt together in a bowl; set aside.
Beat egg until thick and piled softly.
Mix in banana, cooled butter, extract, and then a mixture of the water and drink granules.
Add liquid ingredients all at one time to the dry ingredients.
Stir just enough to moisten flour.
Mix in oat flakes and nuts.
Turn into a greased 8x4x2-inch loaf pan and spread evenly Bake at 350°F 55 minutes, or until bread tests done.
Cool in pan on wire rack 10 minutes.
Remove from pan and cool completely on rack
