Oat Enriched Cookies Recipe
Ingredients
| Butter | 1 Cup (16 tbs), softened | |
| Firmly packed brown sugar | 1 Cup (16 tbs) | |
| Granulated sugar | 1 Cup (16 tbs) | |
| Eggs | 2 | |
| Vanilla | 1 Teaspoon | |
| Sifted flour | 2 Cup (32 tbs) | |
| Soda | 1 Teaspoon | |
| Salt | 3⁄4 Teaspoon | |
| Rolled oats | 3 Cup (48 tbs), uncooked | |
| Chocolate chips | 1 Pkg, sweet chocolate chips (sweet) | |
| Nuts | 1⁄2 Cup (8 tbs), chopped |
Directions
Heat oven to 375°.
Beat butter and sugar together until creamy.
Blend in eggs and vanilla.
Sift together flour, soda and salt.
Add to creamed mixture, beating well.
Stir in oats, chocolate pieces and nuts.
Drop by teaspoonfuls onto ungreased cookie sheets.
Bake in preheated 375° oven for 10-12 minutes.
I substitute 1 cup coconut for the chocolate chips.
