Oat Bran Banana Raisin Muffins Recipe
Ingredients
| 1 Egg, lightly beaten | ||
| Milk | 1/2 Cup (16 tbs) | |
| Vegetable oil | 1/4 Cup (16 tbs) | |
| Granulated Sugar | 1/2 Cup (16 tbs) | |
| Bananas | 1 Cup (16 tbs), mashed | |
| Vanilla | 1 Teaspoon | |
| 1 Cup whole-wheat flour | ||
| Baking soda | 1 Teaspoon | |
| Baking powder | 1 Teaspoon | |
| Oat bran | 1 Cup (16 tbs) | |
| Raisins | 1/2 Cup (16 tbs) | |
Directions
In bowl, combine egg, milk, oil, sugar, bananas and vanilla; mix well.
In another bowl, mix together flour, baking soda, baking powder, oat bran and raisins, stir into egg mixture, mixing only until combined.
Spoon into 12 nonstick or paper-lined muffin tins, filling each about 2/3 full.
Bake in 400°F/200°C oven for 20 to 25 minutes or until firm to the touch.
Makes 12 muffins.
