For the crust:
 Flour3⁄4 Cup (12 tbs)
 Sugar3 Tablespoon
 Fresh lemon juice1⁄2 Tablespoon

For the filling:
 Vanilla1⁄4 Tablespoon
 Cream cheese24 Ounce, softened (3 packs)

Directions

MAKING:
To prepare the crust:
1)In a bowl combine flour, sugar, and lemon juice.
2)Cut the butter into the flour mixture until crumbly.
3)Into this mixture now cut in the egg yoke and vanilla.
4)Pat 1/3 of the dough onto the bottom of an 8" cheese cake pan or spring form pan.
5)Bake in a 400 degree oven for about 7 minutes until golden brown; cool.
6)Attach the bottom to pan and pat remaining dough onto the sides to a height of 1 1/2 inches.

To prepare the filling:
7)In a large mixing bowl beat together the cream cheese, lemon juice, vanilla.
8)Mix the 1 c sugar with the flour and salt and slowly add to the cream cheese mixture.
9)Add the 2 eggs and 1 egg yoke all at once and mix well. Add the milk mix until well combined.
10)Pour filling into crust lined pan and bake in a 450 degree oven for 10 minutes then reduce the oven
to 300 and bake for 50 to 55 minutes or until a toothpick stuck in the center comes out clean.
11)Let it cool then chill for a couple of hours before eating.

SERVING:
12)Serve the lemon pie chilled cut into slices and enjoy!
