Ingredients

 
5 tablespoons butter
 
1 clove garlic, finely chopped
 
1 medium-sized onion, finely chopped
 
1 1/2 pounds mushrooms, sliced
 
3 tablespoons whole wheat flour
 
2 tablespoons tomato paste
 
1 8-ounce can tomato sauce
 
2 tablespoons soy sauce
 
1 cup plain yogurt
 
1/4 teaspoon salt
 
1/4 teaspoon freshly ground black pepper
 
1 cup toasted, unsalted walnuts, cashews, pecans, or peanuts

Directions

1. Melt the butter in a large skillet and saute the garlic and onion until tender but not browned. Add the mushrooms and cook until wilted.
2. Add the flour, tomato paste, tomato sauce, and soy sauce to the skillet. Bring to a boil, stirring until the mixture thickens.
3. Stir in the yogurt, salt, pepper, and nuts and reheat but do not boil.
