Directions

Mix together the apples, brown sugar, spices and half the walnuts.
Divide between 6 individual baking dishes, about 10 cm (4 inches) in diameter and about 4 cm (1 3/4 inches) deep.
To make the pastry, mix together the flour, granulated sugar and salt and rub in the butter until the mixture resembles breadcrumbs.
Stir in the egg yolk and the remaining nuts.
If necessary, add a little water to bind the dough together.
Divide the dough into 6 portions and pat each one into a round about 15 cm (6 inches) in diameter.
Place the dough rounds on the baking dishes and pinch over the edges to seal.
Make a few slits in the top of each one.
Bake in a preheated moderate oven, 180°C (350°F), Gas Mark 4, for 40 to 45 minutes or until the crust is golden.
Serve warm or cold.
