Nutted Fruit And Cheese Salad Recipe
This is a delicious Nutted Fruit And Cheese Salad which will make you keep asking for more! There is not a single month when I don't serve this yummy Side Dish! It is always prepared with a focus on Fruits. In my view, if one calls oneself a good cook, one must have a personal recipe of Nutted Fruit And Cheese Salad, just like I do.
Ingredients
For the dressing:
1/3 cup firmly packed fresh mint or basil leaves
1/2 cup buttermilk
2 tablespoons honey
2 teaspoons lime juice
2 teaspoons olive oil
Forthe fruit salad:
1 large Cranny Smith apple, cored and cut into 12 wedges
1 large Empire, Mcintosh or Red Delicious apple, cored and cut into 12 wedges
2 large Bartlett pears, cored and each cut into 8 wedges
4 ounces low-fat Cheddarcheese,cut into 1/2 inch cubes
1/4 cup pecans, coarsely chopped
Mint leaves (optional garnish)
Directions
1 To make the dressing: In a food processor or blender, whirl the mint, buttermilk, honey, lime juice, and oil for about 30 seconds or until smooth.
Transfer to a jar with a tight-fitting lid and refrigerate for several hours or overnight.
Will keep, refrigerated, for up to 4 days.
2 To make the salad: In a large bowl, place the apples, pears, cheese, and pecans and toss together.
Shake the dressing well and drizzle it overthe fruit.
Garnish the salad with the mint if desired.
