Nut Loaf De Luxe Recipe
Ingredients
5 tablespoons unrefined oil
1 medium onion, chopped
1 green pepper, chopped
1/3 cup tomatoes, chopped and drained
2 tablespoons chopped parsley or celery tops
1 cup cooked brown rice
1/3 cup whole wheat bread crumbs
1 cup walnuts, chopped
1 egg, well beaten
3/4 teaspoon sea salt
1/4 teaspoon paprika
1 teaspoon grated lemon peel
2 1/2 cups mashed potatoes
Paprika
Garnish:
Parsley and cherry tomatoes
Directions
Heat a skillet; add oil, onion, and pepper and saute.
Mix sauteed vegetables with next 9 ingredients.
Place in oiled, 1 quart baking dish and bake 30 minutes at 350 Degree.
Remove from oven.
Cover with seasoned mashed potatoes, sprinkle with more paprika, and return to oven until potatoes are browned (approximately 15 minutes).
Garnish with bunches of parsley and whole cherry tomatoes.
Serve with Beets Aglow and a tossed green salad.
