Ntakos Cretan Sandwich Recipe

Ingredients

 Paximadia or other Whole-wheat crackers - 4
 Ripe tomatoes12
 Oregano - a pinch
 Black Greek or Mediterranean olives - 3 dozen, pitted and cut into pieces
 Kefalotiri or pecorino cheese - 2 cups, sliced thinly or shaved
 Olive oil1/2 Cup (16 tbs)

Directions

MAKING
1. Arrange Greek toasts on a serving platter or on individual plates.
2. Arrange tomatoes slices on each
3. Sprinkle with oregano.
4. Arrange olives on top.
5. Scatter cheese and
6. Finally drizzle generously with olive oil.
7. Cover with plastic wrap and let stand at room temperature for at least 4 hours for the flavors to blend.

SERVING
8. Serve as an appetizer.

Some important corrections. Shift step 6 to number 2. You should put olive oil directly on the toast. Step 7 is not required. In fact it destroys the toast. Nobody does that here in Crete. With love from the www.foodadvisor.gr team.

Thanks for the tips. These are on crackers so won't they go soggy if we drizzle the oil directly on top as you suggested? Step 7 most certainly is not important! Who can wait that long to eat them :)

Hi, it is great to see you are interested in Cretan food. We do not put a large amount of oil on the bread. Let say… 1-2 spoons. I forgot to note that a good idea is to put some salt directly on the bread. Some people put also salt on top of the tomato (this is mostly needed if your cheese is not salty). In Crete we often use feta-cheese or salty mizithra to prepare “ntako”. Enjoy! The www.foodadvisor.gr, team
