Ingredients
4 slices bacon, cut into small pieces
1 tbsp (15 mL) butter or margarine
1 large onion, minced
1 cup (250 mL) potatoes, peeled and minced
2 cups (500 mL) hot water
20 oz (570 mL) fresh clams or canned clams, undrained
2 cups (500 mL) light cream
Salt and pepper to taste
Directions
Place the bacon slices between two sheets of white paper towelling and microwave 2 minutes at HIGH.
Set aside.
Melt the butter or margarine in an 8-cup (2 L) microwave-safe bowl, add the onion and microwave 10 minutes at HIGH, stirring twice.
Add the potatoes and water.
Cover and microwave at HIGH 4 to 6 minutes, or until the potatoes are cooked.
Add the clams and their liquid together with the cream.
Salt and pepper to taste.
Stir thoroughly.
Microwave at HIGH 6 to 8 minutes, or until the chowder is hot.
Garnish each bowl with bacon pieces.
