Nouvelle Fettucini Recipe
Nouvelle fettucine is a vegetable and pepperoni pasta recipe. Made with a creamy blend of vegetables like broccoli, asparagus and carrots, it is herbed with oregano and flavored with cheese. A two cheese vegetable pepperoni it is served hot and soothingly delicious with garnishes of choice.
Ingredients
2 cups broccoli flowerets
1 cup carrot slices
1/4 cup Margarine
2 cups summer squash slices
1/2 lb. asparagus spears, cut into 1-inch pieces
1 teaspoon dried oregano leaves, crushed
3/4 lb Pasteurized Process Cheese Spread, cubed
3/4 cup half and half
1/4 lb. pepperoni, chopped
1/3 cup (1 1/2 ozs.)Grated Parmesan Cheese
8 ozs. fettucini, cooked, drained
Directions
In large skillet, stir-fry broccoli and carrots in margarine 3 minutes.
Add squash, asparagus and oregano; stir-fry until crisp-tender.
Reduce heat to low.
Add process cheese spread, half and half, pepperoni and parmesan cheese; stir until process cheese spread is melted.
Add fettucini; toss lightly.
