Directions
First make the fruit filling.
Turn the filling into a 9 inch (23 cm) pie pan that has been coated with non-stick vegetable cooking spray.
Set aside.
Following the general instructions for using phyllo dough, spread one sheet of dough onto a work surface and coat it with cooking spray.
Spread the second sheet of dough over the first.
Spray.
Repeat until there are four layers on top of one another.
Lift these four layers together and center them over the fruit-filled pie pan.
Use a pair of clean scissors to trim away all but one inch (2.5 cm) around the edge of the dough.
Use your fingers to crimp together the edge to reassemble a traditional pie crust.
Bake in a preheated 375°F (190°C) oven for 15 minutes or until the top is nicely browned.
Watch carefully that it does not overcook.
