Norwegian Baked Cod With Peppers Recipe
Ingredients
1 lb. cod fillet
salt and pepper
grated rind and juice 1/2 lemon
2/3 cup dry white wine
1/2 green pepper
1/4 sweet red pepper
1/4 cup tomato paste
2 tablespoons flour
1/2 cup light cream
1 onion, chopped
2 cloves garlic, chopped
pinch paprika
pinch chopped thyme
1/2 cup Cheddar or Parmesan cheese
2 tablespoons fresh breadcrumbs
Directions
1 Preheat the oven to 400°F. Cut the fish into 5-inch slices and place them in an ovenproof dish. Season the fish with salt and pepper and add the lemon juice and white wine. Remove the membranes and seeds from the peppers and cut the fish into strips. Place the strips on top of the fish.
2 Mix together the tomato paste, grated lemon rind, flour, cream, chopped onion, chopped garlic, paprika and chopped thyme. Pour the mixture over the fish.
3 Sprinkle the fish with the cheese and breadcrumbs and bake in the preheated oven for 20-25 minutes.
