Norwegian Prune Dessert Recipe

1/2 pound large tender pitted prunes
 
1 tablespoon lemon juice
 
1/2 teaspoon cinnamon
 
1 1/2 cups boiling water
 
2 tablespoons cornstarch
 
1/2 cup sugar
 
1/4 cup sherry or port
 
1/2 cup walnuts, chopped

Directions

Boil water in 1 1/2 quart covered casserole 4 minutes in Radarange oven.
Add prunes.
Let stand covered 2 hours.
Remove prunes from liquid.
To liquid add sugar, walnuts, lemon juice, cinnamon, and cornstarch.
Cook, uncovered, 1 1/2 minutes, stir well.
Cook 1 minute more till thickened.
Add wine and prunes.
Chill.
Spoon into sherbet glasses; serve topped with almond flavored whipped cream.
