Northwest Huckleberry Recipe
Ingredients
| Butter/Margarine | 1/4 Cup (16 tbs) | |
| Sugar | 1/2 Cup (16 tbs) | |
| Egg | 1 | |
| Vanilla extract | 1 Teaspoon | |
| All purpose flour | 1 Cup (16 tbs) | |
| Baking powder | 1 Teaspoon | |
| Salt | 1/4 Teaspoon | |
| Milk | 1/3 Cup (16 tbs) | |
| Frozen blueberries | 2 Cup (16 tbs), drained | |
| Spice-Crumb Topping | ||
Directions
In a mixing bowl cream together butter and sugar.
Beat in egg and vanilla.
Sift together flour, baking powder, and salt.
Add to creamed mixture alternately with milk.
Turn into buttered 8- or 9-inch square baking pan.
Sprinkle evenly with huckleberries, then with Spice-Crumb Topping.
Bake in preheated moderate oven (375°F.) for 40 minutes, or until toothpick inserted in center comes out clean.
