Normandy Style Salsify Recipe
Normandy Style Salsify has a finger licking taste. The sour cream and egg yolks gives the Normandy Style Salsify a mind blowing taste.

| Butter | 2 Tablespoon | |
| All purpose flour | 2 Tablespoon | |
| Egg yolk | 1 | |
| Creme fraiche | 2 Tablespoon | |
| Parsley | 1 Tablespoon, chopped | |
Directions
Pour the vinegar into a bowl of cold water.
Put the salsify into the bowl, making sure all the slices are covered by the vinegar and water.
Drain the salsify and put it in a dish.
Season with salt and pepper and pour the cider over.
Cover and microwave on HIGH for 12-14 minutes, depending on the thickness of the salsify.
Put the onion in a bowl and microwave, uncovered, for 3 minutes on HIGH.
Drain the salsify, setting aside the cooking liquid.
Mix together the butter, flour and onion.
Stir in the salsify liquid and microwave for 2 1/2 minutes on HIGH.
Whisk the mixture vigorously.
Add the egg yolk and sour cream (creme fraiche), whisking.
Taste and adjust seasoning.
