Normandy Omelette Recipe
Ingredients
| Melted butter | 2 Tablespoon, divided | |
| Eggs | 4 , separated | |
| Strawberries | 1 Cup (16 tbs), sliced | |
| Honey | 1 Tablespoon | |
| Salt | To Taste | |
| Pepper | To Taste |
Directions
In 9-inch pie plate, place 1 tablespoon melted butter.
Turn plate to coat bottom.
Set aside.
In small mixing bowl, beat egg whites until stiff but not dry.
In 4-cup glass measure, beat egg yolks, salt and pepper until thickened.
Fold egg yolks into egg whites; carefully pour mixture into pie plate.
Microwave at HIGH (10) 1 to 2 minutes.
Rotate dish 1/4 turn.
Microwave at HIGH (10) 1 to 2 minutes.
Let stand 2 minutes.
With spatula, loosen edges of omelet from plate.
In small bowl, combine strawberries, honey and remaining butter.
Mix well.
Spoon strawberries onto half of omelet.
Fold other half over strawberries.
Sprinkle with powdered sugar, if desired.
