1 small apple, sliced
2 tablespoons butter or margarine, divided

Dash cinnamon
4 eggs, separated
Salt and pepper to taste
Directions
In small glass bowl, combine apple, 1 tablespoon butter, honey and cinnamon.
Cook, covered with plastic wrap, at HIGH 2 to 3 minutes, or until apples are tender; reserve.
Heat remaining butter in 9-inch pie plate at MEDIUM-LOW 1/2 to 3/4 minute, or until melted; turn plate to coat bottom with butter.
Meanwhile, beat egg whites until stiff, but not dry; beat egg yolks, salt and pepper until thickened.
Fold egg yolks into egg whites; carefully pour mixture into pie plate.
Cook at MEDIUM 4 to 5 minutes.
Let stand 2 minutes.
With spatula, loosen edges of omelet from plate; spoon apples onto half.
Fold other half omelet over apples.
