Norfolk Shortbreads Recipe

Ingredients
5 oz. flour
pinch salt
2 oz. fine semolina
4 oz. butter
2 oz. sugar
Directions
Sift flour, semilina and salt Cream butter and sugar well.
Stir in dry ingredients and knead together lightly.
Turn onto a floured board and roll out to 1/4" thickness.
Cut into 2" rounds with a biscuit cutter and prick with a fork.
Bake on lightly greased trays at 350° F for 15—20 minutes.
Almond Triangles: Reduce flour to 4 oz. and add 2 oz. ground almonds and a few drops of almond essence.
Cut into triangles and bake as above.
