Ingredients
| 1/2 pound medium broad noodles enough oil to fry noodles | ||
| 1/4 pound cooked lobster meat | ||
| Mushrooms | 1/4 pound | |
| Onion | 1 , finely sliced | |
| Bamboo shoot | 1 , finely sliced | |
| Salt | 1/2 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| 1 teaspoon cornstarch mixed with | ||
| Water | 1/2 Tablespoon (Thickening:) | |
| 1/4 teaspoon sesame seed oil dash of white pepper | ||
Directions
Boil the noodles in a generous amount of water for 10 minutes, turn into a colander and rinse with cold water.
Drain well.
Heat 1 inch of oil in a deep 8 inch skillet.
Add the noodles and press them firmly against the sides and bottom of the pan.
Cook for a few minutes till the noodle cake holds its shape, but before it turns brown.
Remove the cake to a hot serving plate and keep it warm.
Drain away the surplus fat from the skillet, but leave the pan oily.
To it, add the lobster meat, mushrooms, onion and bamboo shoot, and saute for 1 minute.
Season with salt and pepper and continue to stir for 1 minute more.
Add thickening to the mixture and cook till the sauce is smooth and clear.
Pour it over the noodles and serve very hot.
