| Chinese vermicelli/Fine egg noodles | 1 Pound | |
| Oil | 1 1⁄4 Cup (20 tbs) | |
| Pork | 1⁄4 Pound, diced | |
| Raw deveined shrimp | 1⁄2 Pound, shelled and diced | |
| Crab meat | 1⁄4 Pound | |
| Soy sauce | 1 Tablespoon | |
| Vinegar | 1 Tablespoon | |
| Anchovy paste | 2 Teaspoon | |
| Sugar | 1 Tablespoon | |
| Salt | 1 1⁄2 Teaspoon | |
| Eggs | 4 , beaten | |
| Bean sprouts | 1 Cup (16 tbs) | |
| Chopped scallions/Chopped chives | 3 Tablespoon | |
| Ground coriander | 1⁄4 Teaspoon |

Directions
Cook for 1 minute and drain well.
Spread on a flat surface to dry.
Heat 1 cup oil in a skillet; fry the vermicelli until crisp, turning it twice.
Drain.
Heat remaining oil in a skillet; saute the pork for 10 minutes.
Add the shrimp, crab meat, soy sauce, vinegar, anchovy paste, sugar, and salt; cook over low heat for 5 minutes.
Stir in the eggs until set.
Mix in the bean sprouts and vermicelli; cook 5 minutes.
Turn onto a platter; sprinkle with the, chives and coriander.
