Noodles And Beans German Style Recipe
Ingredients
| 1 cup white or navy beans | ||
| Water | 4 Cup (16 tbs) | |
| Dill seed | 1/2 Teaspoon | |
| Onion | 1 , diced | |
| Salt | 1 Teaspoon | |
| 6 oz noodles, 1/4 inch wide | ||
| 1 tbs each, bacon dripping and flour | ||
| 1 cup each, chopped cooked ham and sour cream | ||
| Pinch cayenne | ||
| Soft bread crumbs | 3/4 Cup (16 tbs) | |
| Melted margarine | 2 Tablespoon | |
| Cheddar Cheese | 1/2 Cup (16 tbs), grated | |
Directions
Soak beans in the water overnight.
Next morning add dill, onion and salt.
Bring to a boil, then turn heat low; cover and cook slowly for 1 1/2 hours, or until beans are tender.
Add more water during cooking if necessary.
Drain and reserve bean juice.
Cook noodles in boiling salted water until tender.
Drain.
Measure 2/3 cup bean juice into a saucepan.
Stir in a mixture of the bacon dripping and flour.
Cook until thickened.
Add ham, sour cream, cayenne.
Combine with beans and noodles, and scrape into a greased 1 1/2-quart casserole.
Spread with a mixture of crumbs and margarine.
