Noodle Vegetable Soup Recipe
Ingredients
| Miso- 1 1/2 cups or Cooked or Canned Lima Beans or Chick Peas- 1 1/2 cups | ||
| Vinegar | 2 Tablespoon | |
| Beer | 2 Tablespoon | |
| Soy sauce | 2 Tablespoon | |
| Oil | 1 Tablespoon | |
| Onions | 1/2 Cup (16 tbs), chopped | |
| Beef broth | 6 Cup (16 tbs) | |
| Turnips | 1 | |
| Pork | 1/2 pound | |
| Salt | 1 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Egg noodles | 2 Cup (16 tbs), cooked | |
| Shrimp (optional)- 1 cup diced cooked | ||
Directions
GETTING READY
1) Puree the beans in a blender or force through sieve.
2) Scrape and remove the puree in a bowl, mix in the vinegar, beer and soy sauce.
3) Let the mixture rest for 1 hour.
MAKING
4) In a saucepan, heat oil and sauté onions for 2 minutes.
5) Stir in the miso or the bean mixture, broth, turnips, pork, aslt and pepper.
6) Simmer for 15 minutes.
7) Add noodles and shrimps if using and cook for 3 minutes more.
SERVING
8) Serve hot in a warm deep bowl plate.
