 Smoked tofu4 Ounce, cut into 1.5 cm or 3/4 inch squares
 Onions spring4 , sliced
 Garlic1 Clove (5 gm), crushed
 Mangetouts3 Ounce, topped, tailed and halved (75 Gram)
 Chicken stock2 Pint (1.2 Liters)
 Light soy sauce2 Tablespoon
 Dry sherry2 Tablespoon
 Instant rice noodles2 Ounce (50 Gram)
 Salt To Taste
 Pepper To Taste

1. Heat the oil in a wok, add the tofu or bean curd and fry for 2 minutes, turning once. Remove from the wok.
2. Add the spring onions and garlic to the wok and stir-fry for 1 minute.
3. Add the mangetouts, stock, soy sauce, sherry, and salt and pepper and simmer for 2 minutes.
4. Add the noodles and tofu or bean curd and let stand for 2 minutes before serving, reheating gently if necessary.
