Noodle Casserole Recipe
Ingredients
1 cap ricotta cheese or large curd cottage cheese
1 cup plain yogurt
1/4 cup butter, melted
Salt and freshly ground black pepper to taste, optional
1 egg, lightly beaten
1/8 teaspoon grated nutmeg
1/3 cup freshly grated Parmesan cheese
8 ounces whole wheat noodles, cooked al dente
Directions
1. Preheat the oven to 300 degrees.
2. Mix together all ingredients except the noodles. Drain the noodles and rinse with cold water. Add to the cheese mixture and toss.
3. Turn into a buttered 2 1/2-quart casserole or baking dish and bake for 45 to 60 minutes.
