Ingredients

 
1/2 cup raisins
 
2 quarts French Vanilla Ice Cream
 
2 teaspoons vanilla extract
 
1 1/2 teaspoons rum extract (optional)
 
1/2 cup chopped toasted almonds
 
1 cup milk carob chips

Directions

Place raisins into a small bowl, cover with boiling water, and set aside to plump for 15 to 20 minutes.
Drain thoroughly.
Line 3 6-cup muffin tins with paper liners.
In a large bowl, cut ice cream into chunks.
Stir until smooth and creamy.
Mix in vanilla extract and rum extract, if desired.
Fold in remaining ingredients.
Turn into muffin tins, and place in freezer until very firm.
Cut 18 rounds of wax paper the size of the tortoni tops.
To prevent tor-toni from sticking together in freezer, cover each one with a wax paper round, pressing rounds gently onto surface.
Remove tortoni from muffin tins, and store in plastic bag in freezer.
