Recipe Story

Last year I made a No-Bake Apple Pie that I loved so much I really wanted to come up with some more "No-Bake" pie ideas. I mean basically I just pick a pie, think of all of the flavors and ingredients that make it what it is and then simplify! Now don't get me wrong, I love to bake...but when a sweet tooth rolls in at 6 o'clock on a Tuesday night I am not about to bake myself a pie, if ya know what I mean?! It's just not happening. This is exactly where a no bake pie is perfect! It gives me all of the flavors and textures of the real deal with half the hassle, in half the time! I love it! Two sweet potatoes will give you about four servings and I find that whatever is leftover from dessert makes a great breakfast the next morning! I haven't tried it yet, but I bet it would be pretty dang tasty mixed into some pancake batter as well!! Ingredients

 
* 2 sweet potatoes, peeled and chopped
 
* 2 tbsp. of earth balance
 
* ¼ cup of maple syrup
 
* 2 tsp of cinnamon
 
* 1/2 tsp. of nutmeg
 
* A pinch of salt
 
* ½ cup of grape nuts
 
* ¼ cup of pecans, chopped
 
Serves 4.

Directions

Steam sweet potatoes for 8-10 minutes or until nice and tender.

While your potatoes are steaming combine 1 tsp of cinnamon with the grape nuts and chopped pecans. This will be your topping!

Once potatoes are done cooking, transfer them to a large bowl and using a big fork to begin mashing. Keep on mashing until most of the big chunks are gone.

Add in the butter, syrup, and the rest of the cinnamon, nutmeg, and salt. Mix until everything is well combined…take a taste…smile!

Scoop about ¾ cup of sweet potato pie filling into a serving bowl and top with a couple of teaspoons of the grape nut mixture and a dollop of whipped cream. Enjoy!

The only cooking process involved in this sweet potato pie is to steam the sweet potato. Rest of the process is just simple mixing and serving, without any baking. How to do that? Just watch this video and prepare this fabulous dessert within minutes.

Hey Dani! You just made my day with this no-bake sweet potato pie. As my oven stopped wrking for some reason, I was actually looking for some dessert in the no-bake section. And sweet potato is something I have never tried, (simply because of the taste does not appeal to me), but anyhow, when there are so many vouching on its taste, I think it's high time I changed my opinion and given it a try! :) Thanks for the great recipe!

A chef must always taste, but best to not use the same utensil to taste and mix. However, if you ever hang out in a restaurant kitchen this is timid compared to many kitchen practices. Hey it builds up your immune system and resistance to germs. LOL You get more germs off of the grocery cart, cans you touch etc. every time you shop unless you wear gloves, oh and don't forget the mask. Americans are so paranoid about cleanliness and yet they seem to forget to wash their hands often. ahem! Keep up the great videos Dani-most of us love them. Shanti/Mary-Anne

No, actually, she didn't. First, it's a FORK- shows how closely you actually watched the video. She plucked a sweet potato off the end of the fork using her teeth and not actually touching the fork to test for softness. If you can't handle that, stop eating out in restaurants or over at peoples' houses because I can *guarantee* you much worse is done to your food every day.

Hey Dani, Thanks for posting this wonderful Sweet Potato Pie Recipe. Yes indeed no-bake makes it easy. I see that you like cinnamon and nutmeg quite a bit and use these liberally in many of your recipes. I am sold on breakfast dessert ideas. Somehow I enjoy my desserts much more in morning than after dinner. I am going to try this Sweet Potato Pie Recipe. Let us see how it comes out.
